Overclocking is plain and simple, you increase the core and memory clocks a bit. So by doing so the hardware will run faster to better performance. Currently the GeForce 8800 GTX runs standard at 575MHz but you can overclock is easily to 650MHz and then it performs quite a lot faster... You can overclock by using RivaTuner or PowerStrip programs.
